Days 6–10 · The method

Build the five-stage Bengali curry method into muscle memory — phoron, base, bhuno, main, finish. By the end of the week you can structure a curry without a recipe in front of you.

Days 11–15 · Confidence

Cook three signature dishes start to finish, then bend them toward your own memory of home. The final days are about trusting your palate — adjusting salt, acid, and that quiet pinch of sugar by taste, not measurement.
