There is a distinct magic in baking a fresh batch of cupcakes at home, transforming everyday pantry staples into tiny pockets of celebration. As the butter and sugar cream together and the warm aroma of vanilla fills the kitchen, the process becomes just as rewarding as the final treat. Whether you are baking for a weekend gathering or simply indulging a sudden sweet craving, these single-serving desserts offer a comforting ritual that brings a touch of warmth and creativity to any ordinary afternoon.

Beyond the sweet scent filling the air, the true beauty of the classic cupcake lies in its versatility. A perfectly baked, golden sponge serves as a blank canvas waiting for your personal touch, whether that means a generous swirl of rich buttercream, a hidden fruit filling, or a simple dusting of sprinkles. Ingredients

• 1.5 cups (180g) all-purpose or plain flour • 1.5 teaspoons baking powder • 0.25 teaspoon salt • 0.5 cup (115g) unsalted butter (softened to room temperature) • 0.75 cup (150g) caster sugar or superfine sugar • 2 large eggs (room temperature) • 0.5 cup (120ml) full-fat milk • 1.5 teaspoons vanilla extract • 2 tablespoons vegetable oil or canola oil

Instructions

  1. Heat the oven: Pre-heat your oven to 180°C (350°F) and line a 12-hole muffin tin with paper cupcake liners.
  2. Whisk dry ingredients: In a medium bowl, sift together the flour, baking powder, and salt.
  3. Mix wet base: In a large bowl, cream the softened butter and sugar together with an electric mixer until light and fluffy (about 3 minutes). Add the eggs one at a time, beating well after each, then stir in the vanilla extract and vegetable oil.
  4. Combine: Alternately add the dry flour mixture and the full-fat milk to the wet ingredients, mixing gently on low speed just until combined. Do not overmix.
  5. Fill liners: Spoon or scoop the batter evenly into the cupcake liners, filling each about two-thirds full.
  6. Bake: Bake in the oven for 18 to 22 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  7. Cool: Let the cupcakes rest in the pan for 2 minutes, then transfer them to a wire rack to cool completely before adding frosting.
